Homemade sprouts

this is the best homemade sprouts video I watched so far

50 gm   green beans

1.  sort out the bad one before using   (black colour or broken ones)
     ***  all the containers, spoons, towels  ...  etc  MUST BE OIL FREE  (wash in hot water)
2.  put green beans in a basin, pour in 60 °C  hot water.
      When the water drop to 30°C, cover it (totally dark) and soak the beans for 12 hours.

After 12 hours

3.  rinse the beans with 30°C warm water,
4.  line a cheese towel under a plastic (oil free) sieve,  spread the drained soaked green beans
      evenly on the cloth,
     * fold the cloth edge to cover the beans and don't let light goes in
        (sprouts see light will have a bitter taste)
     * then cover another thick towel on top
        (the weight of the heavy towel can make the sprouts grow short and chubby
          instead of skinny tall)
5.  pour 30°C water on top of the thick towel
6.  the put the sieve with beans in a deep basin , cover it with a lid (again to stop the light goes in)
7.  don't open the cheese cloth, rinse the beans with 30°C warm water twice daily,
     (you might need to wash the thick towel)
8.  sprouts are ready to eat after 4 to 5 days   (best room temperature to grow sprouts is 21 to 27°C)
9.  take the cheese cloth out and shake the bean shells out on the sink,
     harvest it by using a pair of scissors to cut the root from the stem and
     put the fresh sprouts in the box and keep in fridge.

***  I warn you!  Don't be lazy !
         Must take away the root and shell,  only very poor and messy chinese keep the root
        Sprouts can also be a fine dish on chinese daily dining table because in olden days
         it needs the maid/servants to hand pick the head and the root of each sprout
         and half kg of fresh sprouts after cooking can only make one small to normal size dish.
        So in olden days, normal big family daily have at least 20 people having dining at the same time
        You can imagine the picture of the maids picking sprouts in the kitchen !

 



Sprouts dishes

Korean side dish -  cook in hot boiling water for 10 - 15 seconds,  drained and season with sesame oil, soya sauce, sugar, pepper, salt

Fried sprouts -   pork/chicken, onion, (optional - spring onion/leek or green bell pepper , anything green)  chinese dried mushroom or elephant ears,  something black colour,  carrot or red bell pepper ( something red)
