I really loved yemitas, which means “little egg yolks” in Spanish. As a child, I especially enjoyed their flavor and texture and always ate (many) more than I was supposed to! As an adult, I discovered the truth about my “surprise dessert” when I learned how to make it. The process is very simple, so I’ll teach it to you if you want to surprise your kids too.
The first thing you must do is prepare a simple syrup with refined sugar, cinnamon stick, a few drops of lemon (optional) and water. As soon as the syrup begins to boil, lower the heat and allow it to cool down. In the meantime, whip a set of egg yolks really well. When the syrup is warm, add the yolks and cook the mixture in a water bath (a “bain-marie”).
In order to prevent it from sticking to the bottom of the pan, it is very important that you stir it continuously with a wooden spoon until it thickens. At this point, ad a splash of vanilla. Drop teaspoons of the mixture in a greased tray, and when the yemitas cool down, roll them into little balls and glaze them up with sugar.
My mother says that if you allow them to dry overnight, the result is twice as good. And if you prepare them as a gift, you can wrap them individually in cellophane, like bonbons.

Ingredientes
2 tazas de azúcar blanca
1 taza agua
4 ó 5 gotas jugo de limón
1 ramita de canela
1 raja de cáscara de limón
1 taza de yemas de huevo
½ cucharadita de vainilla
Modo de preparación
Preparar un almíbar con azúcar, agua, jugo y cáscara de limón y canela.
Dejar hervir hasta que se formen burbujas pequeñas. Sacar del fuego y dejar enfriar hasta que esté tibio.
Medir una taza de almíbar y añadirla a las yemas ligeramente batidas. Verter en una cacerola de fondo doble y cocinar a Baño María hasta que espese bien y se vea el fondo de la cacerola.
Mientras se cocina se debe mover con una cuchara de madera para que no se pegue. Añadir la vainilla y verter por cucharaditas sobre una bandeja previamente engrasada.
Una vez frías, darle forma de bolitas y pasarlas por azúcar.
